Our signature sourdough is made with our special blend of gluten-free flours, natural sourdough starter, and a slow fermentation process, resulting in a delicious flavour with a tacky crumb and a chewy, satisfying texture. It's perfect for sandwiches, toast, or simply enjoying on its own.

Your bread arrives vacuum packed to preserve freshness, flavour, and texture from our bakery to your door.


Storage on Arrival

To enjoy your bread at its very best, please choose one of the following:

  • Keep at room temperature in sealed bag for up to 48 hours, then bake, or

  • Freeze for up to 3 months and bake at your convenience


Baking for the Perfect Loaf

A hot oven and a touch of steam are the secrets to a beautifully crisp crust and soft, open crumb.

Preheat

  • 200°C (conventional oven)

  • 180°C (fan oven)

You know your oven best — you’re aiming for a confident heat that brings the loaf to life, without scorching.


Prepare the Oven

  • Place a small ovenproof dish (at least 2cm deep) on the bottom shelf

  • Place a flat baking tray on the middle shelf

  • Fill a jug with 150ml water


Bake

  1. Once the oven is fully heated, open the sealed bag and gently remove your loaf

  2. Place the loaf directly onto the tray on the middle shelf

  3. Carefully pour the water into the dish on the bottom shelf

Take care — the steam will rise quickly.
Close the oven door promptly to trap the steam and create a beautifully crisp crust.


Baking Time

  • 16–18 minutes from chilled

  • Add 2 extra minutes if baking directly from frozen

Once baked, remove the loaf and allow it to rest on a cooling rack.


The Final Touch

We know it’s tempting — but please allow the bread to cool before slicing.
Gluten-free loaves need a little extra time to settle, and this rest ensures a clean slice and perfect texture throughout.
